Fortune Cookies
Before you begin this, with clean hands, have the kids write up several different possible fortunes on narrow pieces of paper. They need to be ready to place in the cookie as soon as they come out of the oven.
Ingredients:
•2 egg whites, room temperature
•6 tablespoons butter
•1/4 cup sugar
•1/2 cup flour, sifted
•1/4 teaspoons vanilla extract
Directions:
Pre heat the oven to 350°. Whisk the egg whites until stiff then chill them. In a mixer, cream the butter, then the sugar until well mixed. Blend the flour in, blend in the vanilla. Add the chilled egg whites and mix on low until the batter is smooth. Drop the batter by tablespoons onto a silpat® or parchment paper. You should get about 6 per cookie sheet. Bake until light golden brown, 7 to 8 minutes. Remove the pan from the oven and quickly place a fortune across the center with a bit hanging out. Fold the cookie circle in thirds over the fortune with ends slightly overlapping each other. Turn them over and pinch the opposite sides together then let them cool.
This recipe makes about 20 good sized cookies. Good Luck!
